"Fos & Sami"
An extraordinary rosé and an award winning red wine. Both are strong and intense wines. Characteristic is the evolved tannin with ample growth margin that denotes a marked longevity. Aging of about 18 months in small 225 liter oak barrels, bottling without filtration and 12 months in bottle.

360 is Officina del Sole’s sparkling wine. Spumante is the liveliest wine and we have chosen to give life to this label caring for it from its creation in the vineyard to the second fermentation in our cellar. A blend of noble grape varieties, Passerina, Verdicchio and Chardonnay for a fresh, pleasant sensation and the long Charmat method to enhance tertiary aromas.
There is a pasta factory that produces it's pasta in the middle of the grain fields. Pasta with a 'bite' due to the 'grana duro', the 'tough grain'.
Pasta produced from durum wheat cultivated directly by the company. Semolina and pasta are the only ingredients. Circular bronze die plates are used and the pasta is dried at temperatures lower than 44°C, taking about 20 hours for short pasta and about 40 hours for long pasta. Spaghetti have a diameter of 2,2 mm and a length of 260 mm.
From the 1800s, the Sassetti family has characterized the agricultural history of the Ete river valley. A peasant family, dedicated to work in the fields to ensure survival. In 1897, their history of olive growers began.
